
Cheese fondue

The month of February is undoubtedly the month of love, thanks to Valentine’s Day on the 14th. For some people, it’s nothing more than a commercial grab but for others, it’s an opportunity to take a break from the frantic speed of our lives and say again the words of love that warm our hearts and make us smile. Celebrate this event by offering yourselves a romantic supper of cheese fondue in the cosy comfort of your home.
Ingredients
½ bottle dry white wine
3 garlic cloves, finely chopped
¼ onion, finely chopped
1 knob of butter or a splash of oil
400 g grated Gruyere cheese
2 tbsp. cornstarch
Kirsch (cherry liqueur, optional)
1 baguette of bread bought from your favourite baker
Chives, chopped
Truffle oil, to taste
(Platter of deli meats, optional)
Method
Sauté the onions and garlic in a fondue pot until they’re translucent, without letting them colour. Add the white wine and bring to a boil, then reduce heat for 2 minutes to medium. Incorporate the cheese, stirring constantly.
In a small bowl, mix the cornstarch with 2 tablespoons water or kirsch.
Add the cornstarch to the fondue while mixing, until the desired consistency is obtained.
Tear the baguette into coarse pieces, using your hands.
Add the chopped chives and a few drops of truffle oil to the fondue, if desired, and serve immediately in the same fondue pot.
A platter of deli meats (grison, prosciutto, salami) and small gherkin pickles can also accompany the fondue.
